Pumpkin, Bean, & Sausage Stew

1 small pumpkin, * peeled, seeded and diced

1 small onion, chopped

2 small potatoes, peeled, scrubbed, and diced

2 carrots, peeled and diced

1 cup canned white beans, drained

4 Italian sausage links

2 tbsp olive oil

1 tsp ground cumin

2 tbsp chopped parsley

4 cups chicken broth


Cook sausage and onions in olive oil for about 5 mins. Add remaining ingredients; simmer for about 30 mins until pumpkin and potatoes are tender. Add salt & pepper to taste. Serve.


* To save the time from processing a pumpkin, look for any type of winter squash that is already prepped in the produce section.
